Sugar Skulls date back to the Spanish conquest. The tradition of honoring the dead in Mexico had existed before this, but the Spaniards brought new learnings and customs by molding decorations from ingredients easily available to the people. Sugar was accessible to the Mexicans at the time and that included those that didn't have much money. Learning they could make the skull molds with sugar & water, they evolved and became an important symbol. Today there are many different versions of the sugar skulls. There are not only different sizes but there are also versions that can be eaten. However, the meaning behind the sugar skulls remains the same.
